ACE Bundt cake

If you’re looking for a vitamin packed treat, this cake is what you need. Besides being yummy and incredibly easy to make, it contains puréed carrots, orange and lemon juice, which is why it’s also known on the Web as the ACE cake (from the names of the vitamins it contains: A, C and E). So, the next time your little ones tell you tbey don't like carrots, let them have a slice of this giant donut and see if they change their mind!

Ingredients
3 eggs
150 g sugar
200 g carrots
100 g Canola oil
1 orange, the juice and zest of
1/2 lemon, the juice and zest of
1 Tbs Grand Marnier (may be replaced by Vanilla extract)
220 g flour
16 g baking powder
Method
Heat oven to 175 C and grease your Bundt cake mold with butter and flour;
Peel the carrots and blend them along with oil until you have an orange puree;
Combine eggs and sugar until fluffy and pale yellow. Then add in: orange and lemon zest, puréed carrots, orange and lemon juice, Grand Marnier (or Vanilla extract) while keeping on whisking;
Add in dry ingredients (flour and baking powder) and mix again until combined;
Pour batter into the prepared mold and bake at 175 C for 40 minutes. Enjoy!
