Easy coconut cookies ("Congolais" )



Ingredients

  • 2 eggs

  • 100g confectioner sugar

  • 200/250g coconut flakes


Method

  1. In a bowl whisk eggs and sugar until nicely mixed and foamy;

  2. Add in coconut flakes little by little and gently fold them in with the help of a spatula;

  3. Let rest in the fridge for 10 minutes;

  4. Use your hands, two spoons or an ice-cream scoop to form little balls and drop them on a greased oven-proof tray;

  5. Bake at 170C until the bottom of your cookies turns brown (around 15 minutes), then broil for one minute if you'd like the top to be brown too.
