Rustic pie

If you're looking for a quick and healthy showstopper, this Italian savory pie is the answer. The pastry is made of butter and wholemeal flour but it is so much quicker and easier to make than a traditional pastry dough. You just mix all the ingredients together and it's ready for you to roll it out on your countertop. No resting or proofing required so you could really make it right now and have it ready in as little as half an hour! Are you looking for your rolling pin yet?
Ingredients

Dough
150 g all-purpose flour
120 g whole meal flour
130 g ricotta cheese
80 g butter, diced
1 egg
1 tsp sugar
1/2 tsp salt
1 tsp baking powder (optional)
Filling
250 g ham
150 g mozzarella cheese
Optional
1 egg yolk
1 tsp milk
1 Tbs black sesame seeds
Method

1. Mix flour, butter, ricotta, 1 egg, salt, sugar and baking powder until the dough comes together and forms a ball (using a food processor makes this super easy and it will only require a couple of minutes). Transfer pastry to a clean countertop and dust it with a little flour. Divide it into two equal parts, then roll each out giving it the shape of a thin circle (around 30cm wide);
2. Place one disk of pastry on an ovenproof tray that’s been previously oiled or covered with parchment paper. Top the first disk with ham and mozzarella cheese leaving a 1-cm margin from the border, then cover it with the second disk of pastry;
3. Gently pinch the two disks' borders together making sure they adhere perfectly and trim any excess pastry. Then pierce the top with a fork;
4. In a small bowl, mix the remaining egg yolk with 1 tsp of milk. Brush the top of your pie with this egg wash and sprinkle with black sesame seeds (you may as well use rosemary or parmesan cheese);
5. Bake at 190°C fan for 25 minutes. Bon appétit!
