Sourdough Pizza

Have you got some unfed sourdough leftover that you're about to discard? Don't! You can bake so many yummy recipes with it: how about a sourdough pizza crust?

Ingredients
Crust
1 cup unfed sourdough starter
1/2 cup lukewarm water
2 1/2 cups flour
1 tsp salt
1 tsp raw honey
1/2 tsp dry yeast
Toppings
200 ml Pizza sauce
100/150g Mozzarella cheese
Any topping of your choice (in the picture: Italian salami, smoked salmon, mozzarella cheese)
Method
First of all, take your unfed sourdough out of the fridge and make sure it gets to room temperature before you use it;
Place all your ingredients, except salt, in the bowl of a standing mixer or bread machine (liquid ingredients should be followed by dry ingredients) and mix on medium-low speed for a couple of minutes, then add in salt and mix for 6 minutes until combined;
Let dough rise in a warm place for at least 2 hours - it is ready when it has doubled in size;
Work dough quickly on a floured surface to give it a round shape, then transfer it to a greased oven-proof tray. Cover it with a wet cloth and let rest for 15-20 minutes;
Now rub your palms with a little olive oil and press the proofed dough out to the edges of your tray. To do this, place one hand on top of the other and gently stretch the dough;
Spread a layer of tomato sauce on your dough and bake it at 240C for 5 minutes. Take it out of the oven, add mozzarella cheese and any other topping and bake for 10 more minutes or until the cheese has melted and the bottom of your crust is slightly brown.
* Make sure you push any air bubble towards the edges: this will give you a thin crust and a higher edge.
