Thermomix Orange Magdalenas


Magdalenas cupcakes are our new family addiction. They’re so soft and moist and smell incredibly good. The story goes they were first baked in Spain where a lady used to sell them on the pilgrim route to Santiago. The original recipe contains lemon zest, but I like this orange version better. A plus: you can make it in your Thermie in literally 7 minutes!

Ingredients (for 12 Magdalenas cakes)

  • 1/2 Orange, peeled and cut into pieces

  • 3 eggs

  • 150 g sugar

  • 150 g sunflower oil

  • 165 g flour

  • 12 g baking powder

  • 1 tsp lemon extract*

  • 1 pinch salt

Method

  1. Place orange, eggs and 130 g sugar (keep 20 g aside for later) into the bowl and process 3 min/37C/speed 5, then whip 3 min/speed 5;

  2. Add in oil and mix 15 sec/speed 5;

  3. Add in flour, vanilla extract, baking powder and salt, then mix 8 sec/speed 6.

  4. Line a muffin tin with cupcake liners then fill in each cavity 3/4 full and let rest in the fridge for 30 minutes. Meanwhile, preheat oven to 250 C static/240 C fan;

  5. Take muffin tin out of the fridge and top each cupcake with a little sugar (use the 20 g you had kept aside). Lower your oven temperature down to 220 C static/210 C fan, then bake for 12/15 minutes in the middle rack of your oven. Enjoy while still warm!


*Orange or lemon zest will work too. I skip them because my picky kids don’t want them in… 🤦🏻‍♀️🧐
